Almond Pancake and Summer Fruits

Another healthy breakfast option to give you a boost in the morning. It contains 2 of your 5-a-day and is delicious! I've been enjoying this as a little break from the Bircher muesli. It's nice and simple, makes 2 and is ready in about 10 minutes.

Ingredients: 


2 eggs
3tbsp of ground almonds
2tsp of oil
LOTS OF FRUIT and some yoghurt!

Method: 


1. Heat 1tsp of oil in a frying pan over medium heat
2. Beat the egg and 1 1/2 tbsp of ground almonds, add 1tbsp of water
3. Pour batter in frying pan, covering the base evenly 
4. Cook until set and the underside is golden brown - no need to flip unlike normal pancakes
5. Put on plate and make another one!
6. Serve with as much or as little fruit as you like and maybe some yoghurt

I like to serve mine with a 2tbsp of goats milk yoghurt, a nectarine, an apricot, raspberries, strawberries, blueberries, banana and sometimes some pomegranate seeds! It's delicious! Let me know if you try it out!!
